Glucose syrup is a kind of starch as raw material in the action of enzyme or acid produced by a starch syrup. The main ingredients for glucose are maltose, malt trisaccharide, malt four sugars, and more than four sugars. It is also known as liquid glucose, high fructose corn syrup, and dextrose. Glucose syrup is made by hydrolysis of starch. In the 1960s, glucose was produced by microbial enzymes. This is a major innovation and has obvious advantages over acid hydrolysis.
